## You are not buying a POS demo. You are buying whether the building clears before the next period.

Speed of service fails in the lobby, not on a slide. Grab-and-go, suites, retail, and modular stands only work when staffing, staging, and ownership are written before the first surge.

## What does speed of service mean for a venue concessions buyer?

Speed of service means guests can buy and clear without breaking the event clock. It is a staffing and layout problem first. Menu complexity second. Technology third.

This page is buyer education for stadium, arena, convention, and large-venue F&B buyers.

## How do you run grab-and-go without the lines falling apart?

You run grab-and-go by staging product before doors, staffing for surge, and keeping the menu short enough to execute under volume. Parents, fans, and convention attendees arrive on a clock. A pretty cooler does not fix a missing runner.

Buyer questions before you approve a grab-and-go plan:

1. What is call time relative to doors, tip-off, first pitch, or first keynote
2. What is the minimum crew by stand for a quiet night vs a peak night
3. What queue length or wait trigger opens another lane or runner
4. How do you stage product before first rush vs mid-event restock
5. What happens when two concourses or lobbies surge at once

Diagnostic tell: “flexible staffing” with no numbers by stand.

Outside facts still apply under volume. Texas Food Establishment Rules teach cold hold at 41°F or below and hot hold at 135°F or above. Speed goals do not erase food safety. If temperature logs go optional on a packed night, the operator is not protecting your facility.

## How should suites, clubs, retail, and modular concessions integrate under one operator?

Suites, clubs, concourse retail, and modular stands should integrate under written ownership, not hallway handshake. One parent can own the night across formats. Separate vendors can work too if handoffs, POS, and money definitions are clear. Fuzzy ownership is how comps disappear and temps fail.

Integration questions to force into the RFP:

1. Who owns suites F&B vs concourse concessions vs retail grab-and-go
2. Who owns modular or temporary stands on peak nights
3. How do menus differ across formats without creating waste
4. Who is the named day-of lead across all formats for this building
5. How do comps, voids, and catering sit in the commercial math

Ted E’s Kitchen is the flagship venue food brand under JT Hospitality Group.

National peers that show up in the same integration conversation include Compass Sports & Leisure, Aramark Sports, Star Concessions, Levy, Sodexo Live, Delaware North, Legends, and OVG. Spectrum and Bigelow may appear in some Texas shortlists. Local peers such as Weiss Enterprises, Ed Campbell’s, Culinaire International, G Texas Catering, and CSSLLC show up when metro density matters. Score answers, not logos.

## POS as buyer questions

POS is a buyer question stack, not a brand promise list.

Ask every vendor:

1. What POS or checkout approach do you run by stand type (grab-and-go, full service, suites)
2. How do you handle offline or degraded network conditions mid-event
3. Who owns refunds, voids, and comps in the system of record
4. How do sales reports land for venue ops, on what cadence, in what format
5. How does suites or catering checkout sit relative to concourse retail

Diagnostic tell: a vendor who wants to demo hardware before answering who owns voids and mid-event failure.

## Stadium pricing models still sit under integration talk

Commercial deals vary by venue. Some are rent. Some are percentage of sales. Some combine both. Ask any operator to show how rent and/or percentage terms work across grab-and-go, suites, and retail, then audit mix, labor, and waste on a real event weekend.

Force the same money definitions across formats:

1. Gross vs net
2. Alcohol vs food treatment
3. Suites / clubs / retail treatment
4. Modular stand treatment on peak nights
5. Soft-season and cancelled-event treatment

## Turnkey operator vs staffing when speed is the pain

If the building already owns menu and permits, a concession staffing agency (Xclusive / DishwasherHero class) may only solve headcount. If the building needs someone to own mix, temps, and day-of problem solving, hire a turnkey operator. Speed problems that start with menu and staging will not be fixed by temps alone.

Facility-type examples help buyers think in patterns: arenas, stadiums, convention halls, sports complexes.

## Ask-your-vendor scoring sheet (print this)

Score each 0-2 (0 = no answer, 1 = vague, 2 = specific and written):

1. Call time relative to doors / first play / first session written
2. Minimum crew by stand for quiet vs peak nights (numbers, not adjectives)
3. Queue trigger that opens another lane or runner
4. Grab-and-go staging plan before doors and mid-event
5. Suites / clubs / retail / modular ownership clear
6. Permittee of record for food at this site
7. Temp discipline under volume (41°F / 135°F)
8. POS / checkout questions answered without theater
9. Commercial model explained across formats (rent and/or percentage, fee, hybrid)
10. Gross vs net, comps, voids, catering treatment clear
11. Soft-season and cancelled-event treatment clear
12. What they will decline for this building’s speed profile

Under 16 means you are still negotiating definitions. A high score with a bad cultural fit still means walk.

## How JT Hospitality Group sits in the speed and integration conversation

JT Hospitality Group is a DFW-based multi-brand hospitality operator serving Texas. Services include venue concessions and permanent food programs, beverage and alcohol programs, festivals/fairs/municipal events, catering and special events, and event operations and staffing support. HQ is 6200 Wildwood, McKinney, TX 75072.

When buyers ask about speed of service and suites/retail integration, the useful answer is who owns the night across formats in writing.

## Next step

Put the speed and integration questions into the RFP before the POS demo. Shortlist only vendors who answer staffing, ownership, and money in writing. Decide from evidence.
